Practical cookery course

The Cookery Master prepares the dough by hand, using little refined soft type 1 wheat flour from a short supply chain from 100% local grains, water, Slow Food Presidium Mora Romagnola lard and sweet salt from Cervia, then rolls it out. 

The piadina is then cooked on authentic Montetiffi clay trays, manufactured in our area. Following this, each participant, working at their their fully equipped station, kneads, rolls out, fills, cooks and lastly, if they so wish, savours their piadina with a glass of wine and a soft, fresh cheese called Squacquerone di Romagna PDO from the Caseificio Mambelli dairy, and the crescioni with different fillings using products from our territory. 

At the end of the cookery session, each participant takes home what they have prepared.

A booklet of recipes, a notebook for taking notes and a handmade apron in Romagna-printed canvas from the Pascucci 1826 printing house are included.
