The International Observatory on Italian Cuisine and Good Taste
Italian cuisine and good taste are not merely a collection of traditions and flavors, but a universe of knowledge, practices, and emotions that express the deep bond between people, food, and the land. To give voice, depth, and perspective to this rich heritage, Casa Artusi—in collaboration with the Romagna Forlì-Cesena and Rimini Chamber of Commerce—is establishing the International Observatory on Italian Cuisine and Good Taste, conceived as a center for research, study, and outreach dedicated to Italian gastronomic culture and the social, economic, and identity-defining role it plays in Italy and around the world.
The Observatory serves as a permanent forum for analysis and discussion, offering a comprehensive view of Italian cuisine in all its many facets: from the daily lives of families to professional kitchens, and from local traditions to new forms of culinary innovation. Through research, surveys, and in-depth studies, it documents the evolution of culinary practices, the dialogue between the past and the present, and the relationship between food, education, sustainability, and well-being.
Particular attention is given to how Italian cuisine is perceived around the world and to its role as a tool for cultural exchange and identity-building. Indeed, cuisine has established itself as one of the most immediate and powerful languages through which Italy tells its story and is recognized globally.
The Observatory will produce reports and share data that will be useful to public institutions, businesses, and cultural and tourism professionals, contributing to the debate on key issues such as cultural identity in the global era and the value of Italian cuisine as a shared heritage and strategic resource.
Over time, the Observatory has expanded its network of relationships beyond national borders, involving other countries and fostering comparisons between different culinary traditions. This approach allows for a deeper exploration of the processes of cultural exchange, dialogue, and transformation that shape contemporary food systems.
